Almond flour
The only flour used in all SweetNess products

Almond flour is simply almonds that have been defatted and ground up. It is low in fat and carbohydrates, and rich in protein (50%) and fiber. It makes for delicious and nutritious desserts.

It is the best flour for low-carb, high-protein diets (more than 10g per serving). It's gluten-free and simply great for eating healthy!

Free-range eggs
The only animal ingredient in SweetNess products

All eggs used in my pastry come from free-range chickens. I sincerely believe that the quality of life the hen has affects the energy of the eggs she lays. Instead of being imprisoned in small spaces, these chickens have a better quality of life and will therefore lay eggs of better quality.

Monk fruit & Erythritol
Used to sweeten all SweetNess products

These sweeteners of natural origin replace the sugar used in traditional desserts to offer you just as much sweetness but without any of the negative effects of sugar. They contain no carbohydrates, no calories, no GMOs, and have zero glycemic index. They are used just as you would regular sugar in the kitchen.

Erythritol is an alcohol made from the fermentation of wheat flour or corn, which is then transformed into syrup and finally crystallized.
"Erythritol crystals, even though they represent a processed product (because they come from industrial processes), have a natural origin, unlike other so-called 'synthetic' sweeteners".
​
Monk fruit extract is added to balance the sweetener mixture to create an equal ratio of sweet taste comparable to white sugar. Monk fruit is a round green fruit (the size of a kiwi) formerly cultivated by monks in Southeast Asia for its medicinal properties. It is 250 to 300 times sweeter than white sugar, so it is used in small doses in this sweetener.

Avocado oil
The only oil used in SweetNess products

Avocado oil is a heart-healthy oil and is rich in oleic acid, which is an unsaturated fat. It contains vitamin E and also helps the body to absorb other fat-soluble vitamins.
Other benefits of avocado oil:
- Lowers cholesterol
- Lowers blood pressure
- Improves heart health
- Improves eye and skin health
- Reduces the symptoms of osteoarthritis

Organic fruits
Only organic fruits are used in SweetNess products.
Many cake flavors contains homemade jams and those jams are exclusively made with organic fruits! We all know how much there are pesticides and lack of flavors in fruits we find in the grocery store. Therefore, SweetNess products are only made with organic fruits to give you the best culinary and heatlhy desserts experience.

Natural colorants
Used to colour the frosting.
Food dyes are largely made exclusively of chemicals despite being used in small quantities. To avoid eating such products, SweeNess colours the frostings with natural plant and fruit powders:
- Green : Organic matcha
- Pink : Organic dragon fruit
- Blue / Purple : Butterfly pea flower
- Yellow : Turmeric
- Brown : Organic cocoa

To create another colour, I mix de powders and find the right colours that way.

Vegan margarine
Used to replace butter for the icing

As an alternative to butter, I make my icing with vegan margarine that I whip until creating a fluffy and light texture. This makes it possible to have a delicious creme without lactose, sugar, or gluten for all cakes and cupcakes.

Vanilla paste from Madagascar makes a big difference since it's so rich in flavor and so round in taste. In all vanilla flavored products made by SweetNess, I only use this vanilla to give you the best desserts.
